Many times I am asked what we eat for 3 weeks while we are camping.  Most of the time, we eat similar to what we eat at home, just not quite as gourmet.  I have become adept at cooking with a 2 burner stove (compared to my 5 burner at home).  When my husband and I were first married in 1991, I was working full time and he was a full-time student.  I bought the cookbook 365 Easy One Dish Meals as a way to make cooking easier, and have used/adapted many of those recipes camping. We always try and get some fresh fruits and/or vegetables, but there are some nights that just doesn't happen.  And, many times, we do breakfast for dinner - who doesn't love bacon and eggs or pancakes?

 

Favorites:

Mac-n-cheese - not the boxed stuff with the powdered cheese (although if you like that, super easy!)  If you like easy - grab a box or two of the Velveeta and cheese, and just add some extra shredded cheese.  We find it is the same to cook your own pasta in one pot (you can add sliced sausage for extra protein), drain almost all of the water.  Add in some milk, a small stick of velveeta cheese (a little better than the powdered stuff), and shredded cheese of your choice.  

Tacos - cook up your favorite ground meat (beef, turkey, chicken), add taco seasoning and set up a taco bar on the picnic table - cheese, olives, lettuce, salsa, jalapenos, etc.  Serve with beans or rice.

Bean and cheese burritos - super easy - refried beans and cheese wrapped in a tortilla, wrap foil and stick in the fire to heat.  No stove/cleanup required!  Fresh fruit served on the side!

Fettucini Alfredo - cook your pasta, add premade alfredo sauce (we like Bertoni's in the refrigerated section), add extras (we like bay shrimp and crab).  Have a side salad and you have a complete meal!

Beanies and Weenies - The can all be done on the campfire.  Open a can of beans and cook your hot dogs like you would a marshmallow - all over the campfire!  Make sure you have a pot mitt or a glove - that can of beans gets HOT!

Chicken Stir Fry - Yakisoba noodles and fresh vegetables all mixed together.  The yakisoba noodles come with their own flavor packet (like Ramen noodles, I only use a small amount of the flavor packet),  Truly a one pot meal!

Parmesan Potatoes - In a bowl, add diced potatoes, add a little olive oil and stir.  Add a packet of Onion Soup mix and parmesan cheese.  Place in foil pockets and add to campfire for 30-45 minutes.  Be careful when opening!

Pancakes - mix in anything....fruit (great way to add in mushy bananas), nuts, peanut butter, m&m's!

Bacon and Eggs

 

We usually bring some spices/condiments with us:

Olive Oil

Garlic

Salt/Pepper

Tajin

Onion Powder

 

When all else fails, beer makes a great marinade (especially on chicken)!
